The kitchen is now full of banana and choc chip mini muffins after I had 3 bananas go a bit too ripe.
Following the advice of many other fab cooking bloggy types, I did my usual muffin recipe but instead of using the egg replacer I used blended ripe bananas.
The first batch got good reviews, so I used up the rest of the bananas (that otherwise would have ended up in the bin) and whipped up some more.
The muffin recipe is a standard one, so have a go and replace one blended banana for the egg and then chuck in some yummy Hotel Chocolat 70% chocolate drops (dairy free ingredients).
