In our house, we call these ‘Grandma biscuits’ as my Mum can’t remember where the recipe came from.
As MyItchyBoy grew up my Mum wanted something easy to bake with and for him, so she adapted the recipe to dairy free and then discovered that they were still yummy made with gluten free flour too (so I can eat them!).
Grandma Biscuits
Ingredients
- 1 cup of oats
- 1 teaspoon golden syrup
- 4oz dairy free spread
- 3oz sugar
- 1/2 teaspoon bicarbonate of soda
- 1 teaspoon of boiling water
- 4oz self-raising flour (works with gluten free or normal flour)
- Few drops of vanilla extract, optional
What to do
Cream together the spread and sugary, until smooth. Then add the syrup, diluted with the water and vanilla. Work in the flour, bicarb, then oats.
Make small walnut-sized balls (you can really make any shape/size) and place on a greased/non-stick baking tray.
Bake in a moderate oven (160-170 ish) for 15 minutes until they look done. The more golden, the more crunchy they are.
Variations
You can easily add in chocolate drops or chopped nuts or fruit to the mix before baking.

My son Cannot have wheat can I omit the oats cause they are wheat? Also can I use coconut oil for dairy free spread?

Oats contain gluten but not wheat, however many are made in places where they are likely to pick up wheat traces. It’s worth checking the packaging carefully. Coconut oil is something I haven’t really used. We use the Pure sunflower spread in all baking.

I have always been tempted to dip them in melted chocolate so they are half and half (when it sets). However, they never last long enough to get around to it. Let me know if you try any interesting variations out.

We make a lot of flapjacks in this house and it isn’t too far off that recipe either. Most of my Mum’s ones are in ounces and have been around for years on bits of paper or hand written in books. The old ones are good as you know they’ve stood the test of time.

We have pretty much exactly the same recipe in our family too! It originally came from my Gran so I’m guessing that it was in the back of one of the Women & Home type magazines at some point about 35 years ago. I’d never noticed that it could be gluten free as well as egg and dairy free!
